Vegetable Chow Mein Recipe

  • Chow Mein noodles
  • Vegetables, i.e.:
    • mushrooms
    • bok choy
    • peppers
    • cabbage
    • carrots
    • green beans
  • Add olive oil to noodles after boiling it. Add soy sauce to give it some colour and fresh thyme. Put aside.
  • Cut up each vegetable  in small pieces and saute them individually in olive oil or butter with onion, salt, garlic, pepper. Mix all vegetables together.
  • Serve noodles in platter with vegetables on the top. Garnish with finely chopped green onions.
  • Re bok choy, you can cook as directed above or chop very finely and use for garnish also or both.
  • You can also enjoy the chow mein with baked or bbq’d chicken.
