Vegetable Chow Mein Recipe
- Chow Mein noodles
- Vegetables, i.e.:
- mushrooms
- bok choy
- peppers
- cabbage
- carrots
- green beans
- Add olive oil to noodles after boiling it. Add soy sauce to give it some colour and fresh thyme. Put aside.
- Cut up each vegetable in small pieces and saute them individually in olive oil or butter with onion, salt, garlic, pepper. Mix all vegetables together.
- Serve noodles in platter with vegetables on the top. Garnish with finely chopped green onions.
- Re bok choy, you can cook as directed above or chop very finely and use for garnish also or both.
- You can also enjoy the chow mein with baked or bbq’d chicken.
